Simple Roast Pork Shoulder with Sage Sauce

Instructions
- Season pork with S&P, onion powder and garlic powder. Set on rack on baking sheet uncovered, a few hours up to overnight.
- Preheat oven 300 degrees F. Brown meat over medium high heat in large Dutch oven 5 minutes per side.
- Cover with liquid, tomato paste, soy sauce, and rosemary. Cover, cook 3 ½ hours until 185 degrees F.
- Remove pork to plate. Add shallot, sage and butter to liquid. Bring to boil, reduce to simmer. Add pork back to Dutch oven and serve.

- Serve with Southern Bourbon Baked Beans
