Sweet Pea Minted Timbales
Sweet peas in a beautiful presentation, and delicious. Happy Spring…what better than sweet green peas to bring in the season!

Instructions
- Preheat oven to 350 degrees.
- In large saucepan of boiling water, add a dash of salt and blanch peas for just a couple of minutes. Drain and rinse in ice water.
- In processor, puree peas, 2 ½ sprigs mint, sugar, remaining salt, & pepper until very smooth. Add in egg whites one at a time. Add in 2 T sour cream or options until combined.
- Divide pea mixture into 6 greased ramekins or greased mini spring form pans. Even better, line with greased parchment. Place on baking sheet, pour boiling water halfway up side. Cover with foil. Vent foil with a pairing knife.
- Bake about 30 minutes until tester comes out clean. Let rest for 2 to 3 minutes.
- Garnish with fresh mint and sour cream (or options) as desired.
- Serves 6.
