Spatchcock Chicken with Creamy Green Pepper Sauce

One of my favorite ways to roast chicken… this method promotes even cooking with less time in the oven! Creamy Green Pepper Corn Sauce gives it a spicy twist… Delicious!

Instructions

  • Preheat oven to 450 degrees, position the rack in the middle.
  • Spatchcock the chicken by removing the backbone with kitchen shears or scissors. Cut along both sides of the backbone and remove.  Pull each side of chicken and open like a book. Turn chicken over, breast side up. Press in the middle of the breasts to slightly flatten.
  • Rub 2 T butter over chicken, season with salt & pepper, Elote, and garlic powder. Refrigerate an hour.
  • Season large braiser with T olive oil, Kosher salt and pepper. Add chicken, breast side up.  Roast 40 – 45 minutes until cooked through. If not at temp (160 degrees)  after 45 minutes, turn off heat and leave in oven until chicken  reaches temp. When done, remove chicken to serving platter and cover with aluminum foil and rest.
  • Put braiser on stovetop with any remaining brown bits and liquid. On medium low, add remaining 2 T butter and melt. Add remaining T olive oil, stirring with wooden spoon, and loosen any brown bits.
  • Spoon sauce from the braiser over chicken, garnish with Creamy Green Pepper Corn Sauce. Serve remaining Creamy Green Pepper Corn Sauce on the side.

All ovens are different.  Know your oven is at the right temp with an oven thermometer.
