Slow Baked Salmon with Creamy Fettucine in Pea Mint Sauce
Serves 4-6.
This is my favorite way to cook salmon, slow baking cooks evenly throughout. Here we cook the pasta in the sauce for extra flavor. Company worthy dish for sure!

- Preheat oven to 250 degrees. Line baking sheet with foil. Top with cooling and baking oven rack. Lightly brush salmon with oil, and S & P both sides. Slow roast about 20 to 25 minutes until cooked throughout. Be careful not to overcook.
- In large Dutch oven add chicken broth, heavy cream, half of lemon juice, half of lemon zest and a 2t salt. Bring to just boiling. Add fettucine and cook al dente, a little under the time on package directions as pasta will cook a little more off heat. Stir occasionally. Add a little broth if it seems a little dry. Take off heat. Most of the liquid will have cooked down. Fold in the white parts of the scallions.
- While the salmon and pasta are cooking, make the pea mint sauce. In mini food processor process peas, mint, garlic ½ t each salt & pepper, ½ cup olive oil, and cheese until combined but still with a little texture. Pulse in remaining lemon juice.
- Plate on platter. Start with pasta, top with salmon, and spread some of the pea mint sauce on top. Serve remaining sauce on the side. Garnish salmon with remaining tops of scallions and minced mint or parsley. Serve and enjoy!
