Slow Baked Salmon with Corn Pesto
My only way to cook salmon, low and slow, to cook evenly. And I’m an Indiana girl, so you’ll see some corn forward recipes on Stage Door Kitchen!

- If using bacon, preheat oven to 400 degrees. Cook bacon 15 minutes, watching to not overcook. Set aside. Pat with paper towel.
- Preheat oven to 250 degrees F. Line baking sheet with aluminum foil. Oil, S & P foil. Oil, S & P salmon. Bake salmon 20 minutes. Note: there will be carry over cooking.
- Over medium heat, saute corn in oil, S & P until heated through, just a few minutes.
- Process corn mixture with nuts and basil in food processor, until desired consistency.
- Top salmon with a couple couple Ts pesto. Garnish with basil. Serve with additional pesto and basil on the side.
- Garnish with bacon (if using).
