Shaken Roasted Potatoes

Super simple, melt in your mouth. This will be one of your go to potato dishes for everyday or entertaining! Serves 6 to 8.

  • Preheat oven to 425 degrees
  • Bring a large pot of water to boil, add 2 T Kosher salt. Add the potatoes, bring to boil, reduce to simmer. Simmer for 8 minutes. Drain potatoes. Add back to the pot, cover, and shake hard for about 5 seconds. Transfer to baking rack and let sit about 15 minutes so they dry a bit.  NOTE: You can let them sit for a few hours.
  • Pour oil into a sheet pan. Set in oven until oil just starts to smoke, about 5-8 minutes. Take out of oven. Gently add potatoes to oil and toss to coat. Add back to oven. Turn heat down to 350 degrees. Roast for 45 minutes to an hour, tossing occasionally, until crispy on the edges.
  • Transfer to serving platter. Salt & pepper to taste. Garnish with parsley and serve.
