Poblano Chicken Thighs
Creamy, a little spicy, and juicy chicken thighs. Serve with rice, pasta, mashed potatoes, or Creamy Corn Polenta.

- Slice one of the poblanos into strips, set aside.
- Roast the other poblano either over gas flame or under the broiler until charred all over, about 4 to 6 minutes. Place in a bowl and cover with plastic wrap and let steam about 10 minutes. Peel the skin and remove seeds and membranes.
- While the peppers steam, heat a large pan or braiser over medium heat. Add 2 T butter. Pat chicken dry with paper towel. Season chicken with salt and pepper and sear until golden brown, about 8 minutes flipping half way through. Remove chicken from the pan. Note: it will not be fully cooked, it will finish cooking in the sauce.
- Add remaining T butter to the pan. Add the sliced onions and raw sliced peppers to the pan. Saute until softened, about 5 minutes. Salt and pepper. Add garlic and let cook another minute.
- While the veggies are sauteing, place roasted poblanos in a mini food processor, along with cilantro, ½ t each salt and pepper, and ½ cup stock. Process until smooth. Add to veggies in braiser. Add remaining ½ cup stock, heavy cream, lime juice, honey, and salt and pepper to taste. Bring to boil, reduce to simmer. Add chicken back into the braiser. Cover and simmer until chicken reaches 165 degrees, about 25 to 30 minutes. If you want it saucier, add a little more stock.
- Season to taste. Serve with rice, pasta, mashed potatoes, or Creamy Corn Polenta.
