Lamb Meatballs with Green Goddess Sauce
A bright lamb dish, sauced with green goddess sauce. Serve over rice, pasta, or greens. Serve to company, or make the weeknight dinner seem a little special. With a little prep, i.e Mis en Place, this dish comes together easily. Serves 4.

- Preheat oven to 400 degrees. Line a baking sheet with parchment. Spray with cooking spray. Add all ingredients through black pepper. Mix gently with your hands. Form into golf ball sized meatballs (about 16 meatballs) and place on baking sheet. Refrigerate 10 minutes to help set.
- Bake 25 minutes until cooked through.
- Plate. Do a smear of Green Goddess Sauce on plates or bowls. Spoon in rice or sub noted above * (top with meatballs, a little more Green Goddess Sauce. Squeeze lemon wedges over, and garnish with lemon slices and chopped mint.
