Classic Shortbread Cookies

Classic Shortbread Cookies

Crumbly, buttery classic flavor. Simple ingredients that you’re sure to have on hand! Yields 16 cookies.

  • Preheat oven to 325 degrees.
    Using a hand mixer, cream the butter and the sugar together until smooth.
    Gently mix in vanilla, flour, and salt until just combined.
    Line an 8 x 8 pan with parchment, spray with cooking spray. Spread the dough evenly in the pan. Prick lightly with a fork. Refrigerate 1 hour.
    Bake 30 to 40 minutes until golden. Watch last 5 to 10 minutes to check for doneness. You don’t want it too brown… you’re looking for just golden.Prick the surface with a fork. Let cool in pan 10 minutes. Use parchment to lift out of pan. Cut into 16 pieces.
    Serve with lemon slices.
