Classic Popovers
Nothing better than a classic popover… and better yet if stuffed with something delectable, like roasted shrimp and pesto! Invest in an oven thermometer as temp is key for this recipe.

- Preheat oven to 425 degrees. Make sure your oven temperature is correct using an oven thermometer. Temp for this recipe makes all the difference! Position oven rack in lower third of your oven.
- Toss flour and salt. Separately blend eggs, milk, and butter with whisk. Add in flour and salt, don’t over mix. Set aside for 20 minutes at room temperature. Heavily butter muffin tin with pastry brush. Then add a spray of cooking spray.
- Fill 8 muffin cups 2/3 to ¾ full. Bake 15 minutes at 425 degrees, then reduce heat to 350 degrees and bake for another 15 minutes. Don’t open oven door. Serve warm with butter or preserves. Or, to stuff, gently open tops of popovers, then stuff: chicken salad, tuna salad… or shrimp, pesto and iceberg chiffonade. Endless choices here!
