Pappardelle Alla Vodka Sauce with Smoked Salmon

Rich and a little indulgent, this dish comes together quickly for a week night meal or for a special occasion!

Ingredients

Vodka
2 shots

Instructions

  • Bring water with added stock to boil. Salt water. Add pasta. For one pan plan, boil pasta in large skillet. Cook pasta per package directions. Reserve ½ cup pasta water. Drain pasta and set aside.
  • Melt butter in skillet over medium heat. Saute shallots for 2 minutes. Stir in salmon. Add vodka. Add reserved pasta water as needed to your desired consistency.
  • Add tomato paste through Better than Bouillon. Toss all together gently and keep on heat another minute or two.
  • Serve with Romano cheese, and garnish with cherry tomatoes, Fresno peppers, and chives.

Chef's Notes

  • I like to add a little stock to my pasta water for a flavor boost. Always reserve a little pasta water, just in case, which you may or may not use.
  • Better than Bouillon is one of my favorite new ingredients. I add just a tablespoon or so in this recipe for a little added depth of flavor.
