Tomato Pie
Simple and delicious, serve as first course, brunch main, or side dish.

- Preheat oven to 350 degrees F
- Place thawed pie crust (in foil pan) in glass or porcelain pie pan. Prick pie crust with a fork, bake for 8 to 10 minutes.
- Salt chopped tomatoes and let drain over colander for about 10 minutes. Press moisture out of tomatoes with paper towel or kitchen towel.
- Layer onion, tomatoes and basil in pie shell.
- Mix cheese, lightly beaten eggs, oregano and pepper. Cover tomatoes with cheese mixture.
- Bake 30 to 35 minutes until slightly browned.
