Tilapia with Cream Sauce and Lemon Basmati Rice
Super simple yet impressive enough for guests. The nutmeg and Old Bay Seasoning give this dish a unique sweet, spicy, and savory taste profile.

- Turn on rice cooker and heat for 30 seconds. Add 1 T butter and scallions and cook 30 seconds. Add rice and let toast 30 seconds. Add 3 ½ cups stock, S&P, ½ of lemon zest. Cover and let cook about 32 minutes until rice is tender and rice cooker switches to warm. Let set.
- In skillet, melt T butter over medium heat, add mushrooms and cook until softened, about 5 minutes. Set aside in a bowl.
- Add 1 ½ cups of stock to skillet and bring to boil.. Turn heat to low. Place fish in steamer basket and place in skillet. Cover and steam about 10 minutes (check at 8 minutes) until fish is opaque. Set fish aside on warm plate and cover loosely with foil.
- On low heat melt remaining 4T butter in the skillet. Whisk in flour till just combined. Slowly pour in milk and cream, whisking as you go for about 5 minutes until slightly thickened. Add nutmeg, Old Bay Seasoning, T lemon juice, S&P to taste.
- To plate, top rice with fish. Spoon sauce over. Garnish with Scallion tops and remaining lemon zest. Enjoy!
