Tilapia

Tilapia and Potato Gratin

This is a classic Provence inspired dish, a little decadent with the cream. Great for a holiday or special occasion.

Ingredients

Dry Vermouth
¼ cup

Instructions

  • Preheat oven to 350 degrees.
  • Put potatoes in oven safe bowl. Microwave for 8 minutes, maybe a little longer until knife slides easily in and out.  (Potatoes should be mostly cooked.)
  • Season tilapia with salt & pepper. Heat 2 T olive oil in large braiser on medium heat, until just sizzling. Add tilapia with a spatula. Add the thyme. Cook about 2 minutes per side, until just starting to turn golden. Note:  there will be further cooking in the oven, so they should not be fully cooked here. Use spatula to gently remove the tilapia to a warm plate. Remove the thyme leaves from the sprigs and reserve. Discard stems.
  • Add shallots and vermouth and simmer over medium heat for a few minutes. Stir in the garlic and simmer for 1 minute. Add the heavy cream, and thyme and simmer for a couple of minutes. Stir in the sour cream and Dijon. Season to taste with salt & pepper and remove from heat.
  • Layer one half of the potatoes to baking dish. Layer in tilapia, it’s okay if it breaks into pieces. Top with remaining potatoes. Place the baking dish on a baking sheet. Top with heavy cream mixture. Add a little more cream if mixture seems a little dry.
  • Bake 12 minutes. Mix toasted panko with Romano and remaining 2 T oil and sprinkle over the top. Bake another 10 minutes or until light golden crust forms on the top. Watch to make sure to not over brown.
  • Garnish with lemon juice, lemon zest and lemon wedges and serve.
