Salmon Pate
An easy, elegant appetizer that will be one of your favorties! Serve with crackers, crudites, and/or breadsticks. Yields 2 cups.

Instructions
- Gently saute shallots in a little butter over medium heat.
- Gently process salmon in food processor. Don’t puree. Add remaining butter, shallots, and seasonings and pulse just to combine.
- Put pate into serving vessel, top with clarified butter just to cover. Garnish with lemon slices and parsley.
- Refrigerate for at least thirty minutes.
