Lemon Brown Basmati Rice

- Turn on rice cooker and heat for 30 seconds. Add 1 T butter. And scallions and cook 30 seconds. Add rice and toast 20 to 30 seconds. Add 1 t lemon zest, salt, water, broth, liquids (water, broth, and lemon juice).
- Cover and cook until rice cooker switches to warm, about 30 to 35 minutes. Let stand about 10 minutes on warm.
- Garnish with reserved mint and lemon zest.
Chef's Notes
- Rule for rinsing rice: rinse imported rice but not necessary for domestic rice, i.e. US grown. US rice has been enriched with vitamins. If rinsing rice, continue to rinse until water runs clear.
