Creamy Green Pepper Corn Sauce
This will be one of your favorite sauces, so many uses, chicken, pork, seafood, even beef. Use as a dip with chips or breadsticks. Add a little cream and pasta water to thin for a pasta sauce. Add more spice… red pepper flakes, or your go to. Double the batch and keep on hand all week!

- Roast Anaheim and Poblano chiles over gas stovetop flame or broiled until charred all over. Place in bowl, cover with plastic wrap and let rest 5 minutes or until you can peel skins easily.
- Peel skins, remove seeds and core and discard, reserving any juices. Chop chiles.
- Heat Olive oil in saucepan over moderate heat, add ½ C corn, and onion and saute for about 4 minutes. Add the chicken stock, raise heat to high. Boil until liquid is reduced by half, about 5 minutes. Add in chiles with their reserved juices.
- Process in mini food processor until just starting to smooth (or to your preference). Add in butter, cream, S & P. Pulse a couple times. Fold in remaining corn. Garnish with additional cilantro if desired. Keep warm if using as a sauce for heating proteins or veggies.
