Chocolate Mousse
A classic French inspired chocolate dessert that’s always a hit.

Instructions
- Melt the chocolate in a double boiler over low simmering heat. Whisk in butter one T at a time. Stir in salt, vanilla, brandy. Stir in yolks, one at a time. Set aside.
- In same double boiler, over low heat, warm egg whites 1 to 2 minutes. Remove from heat. Using hand mixer, beat whites to soft peaks. Add sugar, and beat again to soft peaks. Add egg whites to chocolate gradually.
- Whip cream to soft peaks. Gently fold into chocolate mixture. Spoon into your favorite dessert dishes or wine glasses. Refrigerate at least 2 hours.
