Basil Pesto

Instructions
- Process nuts, garlic, salt and pepper in food processor until roughly chopped.
- Add basil and pulse briefly.
- Drizzle in olive oil and process until combined.
- Pulse in parmesan.
- Refrigerate or freeze.
Chef's Notes
- To toast nuts, heat a small dry skillet over medium heat. Add nuts until just aromatic, tossing occasionally.
- Try with cilantro or mint in lieu of basil, or mix with ½ parsley.
- To store, cover with plastic wrap, and maybe a thin layer of olive oil. Also consider storing in an ice cube tray, in the refrigerator or freezer.
