Creamy Kale and Spinach

Classic with a twist, kale adds a little more texture to the usual creamed spinach dish. Easy enough for everyday, but festive enough for a holiday meal!

  • Preheat oven to 350 degrees
  • Heat 1 T oil in a large braiser over medium high heat. Give it a minute or so to heat up. Add kale and cook until just tender, 2 to 3 minutes. Add spinach and stir in.
  • Add cream and simmer for about 5 minutes. Add the cheeses, Worcestershire, chili flakes, nutmeg, lemon zest, lemon juice, and salt to taste. (I like to use most if not all the zest and juice, but save a little of the zest for garnish)
  • Mix breadcrumbs and ¼ C parmesan in a small bowl. Top kale & spinach mixture. Drizzle a little olive oil. Bake for about 12 minutes. If mixture looks a little dry, add a splash or two more of cream. Let set for about 5 minutes. Garnish with remaining lemon zest and serve.

Chef's Notes

You can make a day ahead of serving, up until last step warming in the oven. Let the braiser set at room temperature for about 10 minutes.  Put in the oven when you start to preheat the oven. This allows the dish to slowly warm for even cooking. You may need to add a few minutes to the cooking time, until the dish is warmed throughout.
