French Potatoes Pave

Scalloped potatoes taken to the next level! Buttery, melt in your mouth, and a beautiful presentation. Serves 4 to 6.

Ingredients

Instructions

  1. Preheat oven to 400 degrees.
  2. Prep 8 x 8 pan with parchment paper (with over hang to use to pull out of pan after cooking) and cooking spray.
  3. Melt ¼ c butter in small saucepan over low heat, add garlic, stock, and thyme. Simmer for just 1 minute.
  4. Slice potatoes thinly with a mandoline.
  5. Layer potatoes, adding stock mixture, a little salt and pepper along the way.
  6. Cover with foil and cook for 1 hour.
  7. Cool potatoes. Wrap cardboard with foil and top potatoes. Top with unopened cans of whatever you have on hand for a little weight.
  8. Refrigerate overnight.
  9. Preheat oven to 400 degrees. Cut potatoes into 9 pieces. Place on parchment lined baking sheet. Brush with remaining softened ¼ c butter. Roast 40 minutes. Top with a little more thyme and roast for 10 more minutes.
