Shrimp Fra Diavolo
Spicy, delicious, hearty sauced one-pan Italian dish. Serve with crusty bread. Serves 4.

Instructions
- Pat the shrimp dry, season with salt and 1 t red pepper flakes.
- Heat 2 T olive oil in a large skillet over medium heat. Cook shrimp 45 seconds to 1 minute. Transfer shrimp to a plate.
- In same skillet, heat another 3 T olive oil on medium-high heat until shimmering. Reduce the heat to medium and saute onions about 5 minutes until softened. Add the wine and reduce by one-half.
- Add tomatoes, tomato paste, remaining t red pepper flakes, oregano, and salt and pepper. Bring to boil, reduce to simmer. Simmer 10 minutes.
- Add garlic, shrimp, and pasta. Heat through to finish cooking shrimp, just a minute or two. Garnish with parsley.
Chef's Notes
- Always try to find already peeled and deveined, or easy peel shrimp to save on prep time… a great shortcut.
- Use fire roasted tomatoes if you can find. It’s worth the effort to check out your go to grocery stores to source. If you have an Italian specialty grocery, you’re likely to find these there!
- Rub dry oregano a bit with your hands to release oils, i.e. flavor!
