
Shrimp Pasta with Creamy Saffron Sauce (Gluten-free Optional)
Serves 2 (servings can easily be increased, just adjust measurements accordingly, and maybe add a minute or two in step # 11 ) For a gluten free dish, simply use your favorite gluten free pasta!
A special occasion silky dish, given the saffron ingredient (a little pricey is being generous), but it shines in this recipe. A little lemon brightens the taste of the dish.

Instructions
- Steep saffron in boing water in a ramekin.
- Cook pasta in well salted water, just a minute or two less than package directions, reserve a cup of pasta water before draining.
- Heat olive oil in a large braiser or large skillet, over medium heat.
- Saute shallot till just tender. Lower heat, add garlic paste** for 30 seconds.
- Add wine and simmer a minute or two. Adjust heat as needed.
- Add butter gradually.
- Add saffron and steeping liquid.
- Add cream and bring to simmer, adjust heat if needed.
- Add parmesan gradually.
- Add lemon juice, and let bubble until it thickens a bit, a couple of minutes
- Add pasta and shrimp, for a minute or two. Take off heat. Add a little pasta water if needed.
- Garnish with lemon zest, parsley, and parmesan cheese as desired. Serve in braiser or your serving dish of choice.
Chef's Notes
- *Sub for saffron. Saffron is an expensive ingredient. If you’re looking for an alternative, try 1 t turmeric & 1 t paprika in place of 1 t saffron. Steep the same as in step 1.
- **Garlic paste, mince garlic, use back of your chef’s knife to grind salt with the garlic to make a paste. This is a good trick, to use whenever minced garlic is an ingredient. The paste will melt into your dish. Just note the amount of salt here, so as not to over salt at another point in the recipe.
- ***Roasted shrimp: Use peeled and deveined thawed shrimp, a great time saver! Roast 6 minutes, 400 degrees, just shy of fully cooked as shrimp will finish in the sauce.
